Processing for a Standard Quarter Beef

Due to processing requirements, all beef quarters are standardized. Each one will contain a sample of all the steaks, roasts, and specialty cuts we have to offer. If you would like more customization options, please choose either a half or whole beef. Each quarter will receive: Steaks - Filet Mignon, New York Strips, Ribeyes, Top Sirloin, Sirloin Tip, and Tenderized Round Steaks Roasts - Chuck, Shoulder, Round, Rump, and Sirloin Tip Roasts Specialty Cuts - Brisket, Short Ribs, Stew Meat Steaks will be two per package and 1" thick. Roasts will be approximately 3 pounds. Ground Beef will be 80/20 (average) fat content and will be in 1 pound packages.
